Animal welfare, food ethics and sustainability are high on the agenda. In October, New York City passed legislation to ban the sale of traditional foie gras from 2022.

“For lovers of the taste and mouthfeel of foie gras, all is not lost. UK chefs are now using Foie Royale as a chosen alternative to traditional foie gras… They are recognising the movement in diners and proactively removing traditional foie gras and replacing it with Foie Royale. Diners are no longer only driven by flavour… they want to know how and where the food they are eating is sourced, they expect reassurance of sustainable practices. From chocolate through to seafood and meat, the message from diners seems pretty clear.”
